Gluten Free Chicken Caesar Salad Wraps

My wife and I made a trip to Whole Foods recently. While we were grabbing all of our usual gluten free items, we noticed a new gf tortilla. The Sonoma Gluten Free Wraps are made from dark teff. To be honest, I'm not sure I've eaten teff before so I was interested in trying them out. The Sonoma line of products comes from the La Tortilla Factory brand based in Santa Rosa, California.
I decided to test drive these teff wraps by making Caesar salad wraps, minus the croutons.
I was surprised at how close the taste and texture of these gf wraps were to regular flour tortillas. Unlike other gluten free tortillas, the Sonoma wraps were pliable and easy to roll up without splitting. The taste was very good and combined well with the Caesar salad filling. These wraps will be my tortilla of choice in the future. Give them a try if you get the chance. Enjoy!!!

  2. Teff is my favorite. I have been replacing rice flour with teff in some baking and it has been working out really well.

  3. I can taste this. Fresh, cool and crisp. Now if only I had a Whole Foods within reasonable driving distance. I love this kind of dinner.

  4. I actually bought those tortillas a little while ago but was afraid to try them....so silly, they ended up going bad in my frig. I'm not proud to admit that. You've given them a good review, I will buy them again and actually eat them, this time.

  5. Let me know how the teff goes. I thought I might have had a problem with the grain as it appears it may contain a minute amount of gluten but then again I'm also thinking I can't tolerate milk. Ugh, teff or milk? Prob milk but just curious how other celiacs are doing with the grain. It makes beautiful bread!

  6. Oh, I'm very excited. Let me know if I can continue to be excited. Do these wraps have rice flour in them? Please say no. Then I could eat them instead of having to make them myself. I'd love that short cut. I'd even do a little dance!

  8. Diane, The wraps are made with; Teff, Tapioca flour, and Millet. No Rice flour. You can start your little dance.

  9. Hey Brian - while you're dolling out ingredients can you tell me if they have sugar? If not I'll be dancing along with Diane. :) Like Jen, I am typically scared of so many of these products. Looks like I can start to let me guard down just a little.

  11. Amy, There's no sugar per se. However, corn syrup solids and honey are listed. The wraps have 31 grams of carbs for 1 tortilla.
