When my husband approached me about starting a gluten free blog, my response was, "How will we find time to do this?" Although our time is limited by jobs, life and our energetic three-year-old daughter, I think it is important to share ideas, recipes, tips, and the everyday life and frustrations of a gluten free lifestyle. When I first met my husband (almost 10 years ago), I had literally been diagnosed with Celiac Disease about five days before. I was still trying to grasp what this new disease was and what it all meant. I am also a Type 1 Diabetic and wear an insulin pump. I kept wondering how this great guy that I had just met would take the news of meeting a girl with TWO chronic illnesses. Well, he obviously took it all in stride, as we have been married over six years and have literally learned the gluten free lifestyle together.
My husband is a lieutenant firefighter/paramedic in Oregon where we live. With his unique 24 hours on/48 hours off shifts, he and the men in his department have to cook all of their meals while they are on duty. Brian loves to cook! I often think he was a world famous chef in another life. He loves trying out new recipes, flavors, spices, and dishes. And, of course, I am happy to oblige him by trying out his culinary trials. Luckily (most of the time), I am met with many new delicious treats ranging from a triple layer chocolate cake to his amazing lasagna (all gluten free, of course).
While Brian is definitely the chef in our household, I do enjoy cooking and baking when time allows. Gluten free cooking and baking can be tricky and difficult; yet very rewarding and tasty when done right. Whether you are just starting out on a gluten free journey of your own or maybe you know someone who lives a gluten free life, I hope you will find some useful tools and ideas on our blog.
