Instead of bread crumbs I crunch up Corn/Rice Chex. It is the best GF (and dairy, egg free) meatloaf I've made yet! You have a few options: don't use any, use ground corn chips or rice crackers or use parmesan cheese. Shredded veggies like zucchini or cut and sauted mushrooms are another option.
